THE DUPLEX PADDLE IS A SIMATEC PATENT
The DUPLEX paddle (patented) is a special paddle that, rotating in one direction, positions the paddles at 45° for a suitable mixing of the must, while rotating in the opposite direction it places them horizontally to obtain the Whirlpool paddle. The rotation of the blades is automatic and takes place solely due to the effect of fluid dynamic forces. In this way, at the end of the boiling, simply reversing the rotation of the blade, a fast and efficient Whirlpool is performed without having to transfer the must to a special tank, an operation that would take time and that would significantly increase hot oxidation.
